AUSTIN MARKMAN

A Texas native and graduate of Le Cordon Bleu College of the Arts, Austin Markman oversees Cork & Barrel’s management staff as the director of restaurants. Markman’s goal is to create a welcoming culture and attentive mindset by empowering the team to provide unprecedented levels of hospitality to Round Rock.

Before joining Cork & Barrel, Markman gained notable experience in the hospitality industry through various positions in Dallas and Las Vegas before settling in Austin. He served as the owner and chef of Baked Chef, as well as director of operations at the well-known American Express Centurion Lounge. And most recently, Markman worked as the general manager at Ruth’s Chris in downtown Austin. In addition to his formal hospitality schooling, Markman is a Level 2 Certified Sommelier – a skill he is putting to work at Cork & Barrel. As Cork & Barrel director, he hosts regular educational seminars, tastings, and beverages pairings with Chef Josh Watkins’ incredible offerings. Markman works tirelessly in the never-ending pursuit of the best beer, wine, and spirits offered throughout Central Texas. While quality is always top of mind when creating the beverage program, he instills the importance of an approachable wine and spirits list—something for both novice and oenophile alike.

This is a true nod to the life of Sam Darlington [founder of Cork & Barrel and distinguished Irishman], born out of friendship and family,” Markman says. “The concept provides a unique environment of world-class food and unprecedented beverage selections in an atmosphere that is unlike anything in the area.”
